Overview

Like most of Australia conditions throughout the Hilltops, the 2019 growing season was generally on the drought side of the spectrum. The conditions were exceedingly dry and this was coupled with a long hot summer. Due to the nature of the season, the grapes ripened early in the piece and the crops along with extraction rates were low. The fruit was machine harvested at night and transported to our Hunter Valley Winery where it was processed via a tank press into a stainless steel vessel. The juice was immediately clarified and inoculated with the classical yeast strain DV10. The wine received a light fining with casein and was held at minus 4 degrees prior to filtration and despatch to bottling.

Aroma

On the floral side of the spectrum with a delicate rose petal and orange blossom aroma. At 2 years old there is a hint of the complex terpenes that Riesling is known for.

Palate

A well balanced medium weight wine with delicate flavour weight and refreshing acidity. The wine has a long persistent finish.
