While the grapes were left on the vines until late in the season there was a significant amount of training prior to botrytis cinerea infecting the grapes. Botrytis is a fungus that modifies the juice in the grapes and allows water to evaporate through where the fungus penetrates the grape. The grapes were handpicked and then pressed using an airbag press prior to transport to the Hunter Valley.
