The fruit for this wine comes from two vineyards in the Eden Valley Region, with the warm sunny days allowing flavour ripening while the cool nights help retain natural acids in the fruit to allow for the Rieslings great ageing ability. The grape must was chilled on arrival and immediately pressed lightly in an air bag press to minimise bruising. The juice was then fermented cool to retain natural aromas and the wine was lightly fined and clarified before bottling
