Each bottle is carefully nurtured and individually numbered. The fruit for this wine was sourced from our premium vineyards within the Barossa Valley. This region has a warm growing season with cool nights and minimal rain which allows the fruit to obtain optimal ripeness and flavour development.
Vintage 2019 growing season was dry and mild. A few hot days occurred however they were early enough in the season not to harm the fruit. The days were quite mild leading up to harvest, ensuring great acid retention.
The fruit for this wine was fermented in 8 tonne open fermenters at cool temperatures for around 10 days. Once fermented the wine is allowed to go through malo-lactic fermentation and then transferred to new and old French and American Hogshead barrels to mature for 16 months before bottling
