The 2020 vintage was amongst the driest years that has been encompassed in Australia. The spring was above normal in temperature and this was followed by a long hot summer with fires in all states. Due to a talented group of viticulturists the crop was kept at average yields and ripened without issues.
The fruit was harvested in the cool of the night and transported to our Hunter Valley Winery. The grapes were processed with the absolute minimum of skin contact to reduce colour extraction The juice was immediately clarified and inoculated with the classical yeast strain DV10. The wine received a light fining with casein and was held at low temperature prior to filtration and bottling.
