3 Ways to Barbeque Chicken
With only a couple of weeks left of Summer, it’s time to make the most of your barbeque and try out some new recipes and techniques. We’ve covered lamb and beef in detail (there are some recipes there you do not want to miss!), but this article is focused on an Australian favourite – the Barbeque chook.
Such a versatile meat, chicken can be cooked in so many ways. It can be grilled, marinated, butterflied, coated, and it goes so well with a range of side dishes from potatoes to fresh salads to steamed vegetables – there is a barbeque chicken dish for everyone.
Even better, there is also a McGuigan wine that pairs perfectly with each style of dish, so read on for three ways we’re cooking chicken this summer, and which wine we’re pairing it with.
- Barbeque Chicken Breasts
Grilling chicken breasts on the barbeque is a simple, easy summer meal that goes perfectly with a delicious garden salad, or can even be added to a classic Caesar salad.
Simply coat the chicken in a bit of oil, salt, pepper and paprika. Leave to marinate for a few minutes, whilst you turn your barbeque on. Make sure you have 2 sides; one nice and hot and one a bit cooler.
After the chicken has marinated for at least 10 minutes, place it on the hot side of the barbeque and let the chicken grill undisturbed. This will allow the chicken to get those grill marks that looks like it’s straight out of a advertisement (your friends will be impressed).
Once brown on one side, turn over to the other side and move them to the cooler side of the barbeque where there is less direct heat, close the barbeque and let them finish cooking for another 5 – 10 minutes.
Once complete, you can cover in foil and leave to rest for 5 minutes before cutting up and serving with your side of choice!

- Tasty Chicken Wings
Everyone loves a chicken wing. The skin to meat ratio with the crispy skin is what makes it so delicious and even more so when you can do this in your own backyard.
To prepare the ultimate wings, you can choose a range of marinates, depending on your preference, but one simple way is a combination of garlic, salt, pepper, oregano and rosemary. Simply coat the wings in a plastic bag and then leave to chill for at least an hour, or overnight.
The rest is simple. Turn your barbeque on to medium heat and place the wings on the barbeque and put the lid down. Check and turn them occasionally until they are crisp and golden brown – usually after about 15 – 20 minutes.
These crispy wings are perfect just on their own, but there’s nothing better than chicken and chips, so serve up with homemade potato fries (or frozen, sometimes they’re just as good). Our wine pick for this one is McGuigan Shortlist Riesling as the sweet aromatics and high acidity cut through the chicken wings, making for a delicious pairing.
- Peri Peri Chicken Burgers
This is a great one for when you’re having friends and family over and are just a little bit over the usually sausages and steak, plus who doesn’t love a burger?
Using chicken thigh, marinate the chicken in Peri Peri sauce – this can be store bought, or if you’re looking to create your own then try a mixture of olive oil, chilli, garlic, paprika, oregano, salt, pepper and lime juice. Marinate the chicken for 2 hours or leave overnight on a plastic zip-lock bag.
Turn the barbeque on high heat and place the chicken in on for 5 – 7 minutes on each side. Once cooked, serve in burger buns with lettuce, cheese, tomato and red onion, or any burger fillings of your choice!
